Breakfast Egg Muffin
Whip up these easy, protein-packed egg muffins with bell peppers, spinach, and cheddar for a healthy, grab-and-go breakfast perfect for your active lifestyle.

Ingredients
1 spray cooking spray
6 large egg
1/4 cup milk, whole (or substitute)
1/8 teaspoon salt
1/8 teaspoon black pepper
1 medium bell pepper, red
3/4 cup spinach
1 ounce cheddar cheese
Tools
Whisk
Cutting Board
Instapot
Spatula or Wooden Spoon
Large Mixing Bowl
Non-Stick Spray
Measuring spoons
Putting It Together
Spray a muffin tin with cooking spray and set aside. Preheat oven to 375°F.
Whisk the eggs and milk together in a bowl. Season with salt and pepper.
Dice the bell pepper and spinach into small pieces.
Add the peppers, spinach, and shredded cheddar to the egg mixture.
Fill muffin cups 3/4 full and bake for 20-25 minutes until centers are set and no longer runny.
Allow to cool slightly before serving.
